Description

For the cake, dark chocolate with at least 55% cocoa works best. Before adding the cherries, check that they are pitted. If the cherries are very sour, you can add a little powdered sugar.

    Place the egg yolks in the mixer bowl and crack in the eggs. Then pour the sugar into the bowl.

    Whip everything at high speed for about 8–10 minutes, until a fluffy, light-colored mixture forms.

    Mix the flour and cocoa, then sift through a fine sieve.

    Carefully add the flour to the beaten eggs. Mix everything until you get a smooth, fluffy batter.

    Cut off the top of the sponge cake, about 1 centimeter thick. From the main part, remove the crumb, leaving walls about 0.8–1 centimeter thick. Crumble the removed sponge.

    Place the butter, condensed milk, and chocolate in a bowl, and pour in the cognac. Put it in the microwave or over a double boiler and bring the mixture to a smooth consistency.

    Pour the chocolate mixture with cherries into the sponge cake crumbs and stir.

    For the glaze, combine honey, vegetable oil, cream, powdered sugar, and chopped chocolate. Bring everything to a smooth consistency over a double boiler, stirring.

    Take the cake out of the refrigerator and pour the glaze over it. Return it to the refrigerator until the glaze sets. Decorate the cake and serve it at the table.
