Description
The recipe won't take much time. This is an amazing adult dessert that's definitely worth trying. In this case, cherries are soaked in rum, but you can use any other preferred alcohol if desired. The filling turns out wonderfully tender and rich. The process itself is quite simple, but if you decorate the cake with chocolate glaze, it will make a perfect treat for any celebration. Serve warm or chilled. Ideal with tea.

1. 10–12 hours before baking, wash and dry the berries, remove the pits, and soak them in rum. For the cake base, combine eggs with sugar and whisk until pale. Sift flour with cocoa and add to the eggs. Gently mix everything together and pour the batter into a heatproof pan lined with parchment paper or greased with butter. Bake the cake base at 180°C for about 40 minutes, or until cooked through.

2. Let the prepared crust cool, then carefully cut off the top. Use a spoon to remove the pulp. This is the base you should end up with.

3. Whip the cream with powdered sugar until fluffy.

4. Drain the rum from the berries and let them dry slightly. In a deep bowl, combine the cherries with the cake crumb, cut into small pieces. Add the whipped cream (reserving about 10%) and mix thoroughly.

5. Spread a small amount of cream on the cake's "lid." Place the cherries inside the cake and smooth them out. Assemble the cake and cover it completely with the remaining cream.

6. The final stage is the glaze. For this, we will need a cup of cream, chocolate chips, and a little butter.

7. Place the chocolate in a deep bowl, add the melted butter and hot cream. Stir thoroughly until the chocolate has completely melted. Spread the prepared glaze over the cake.

8. Before serving, leave the cake in the refrigerator for at least 5-6 hours, so it can soak well. You can decorate the top with cherries.
