
Classic Cake
Description
Delicious dessert for the whole family. The classic "Drunk Cherry" cake differs from most others in its preparation method; its special feature is the cherries soaked in brandy, which give the cake a pleasant tangy flavor and a unique aroma! If children are going to eat the cake, omit the brandy—it will still be delicious. Serve cooled or slightly warm.

1. Place the pitted cherries in brandy and let them steep for 5–6 hours. If using frozen cherries, thaw them first; if using canned cherries, drain the liquid; if using fresh cherries, remove the stems, rinse them, and then proceed.

2. Beat the eggs with 125 grams of sugar until a fluffy foam forms. Sift the flour and starch, then thoroughly mix with 2.5 tablespoons of cocoa. Gently fold the dry ingredients into the beaten egg mixture using a wooden spatula.

3. Line a round pan with parchment paper and carefully pour the batter into it. Bake the sponge cake for approximately 45 minutes at 180-190 degrees. Do not open the oven during the first half hour of baking, otherwise the cake will collapse!

4. Completely cool the ready-made biscuit, cut off the top, and remove the center from the bottom part, leaving the edges and bottom intact.

5. Take the butter out of the refrigerator in advance to let it warm up. Beat 300 grams of butter with condensed milk using a mixer, then mix in the crushed biscuit crumbs. Drain the cherries, reserving the brandy, add the cherries to the cream and stir.

6. Spread the resulting cream onto the bottom part of the sponge cake, smooth it out, and cover with the cut top part. Place the cake in the refrigerator.

7. Mix 2 tablespoons of sugar with sour cream, add 100 grams of butter, and bring the mixture to a boil. As soon as it starts boiling, remove from heat, then add 1 tablespoon of cocoa and 1 teaspoon of cognac. Stir well.

8. Remove the cake from the refrigerator. Completely cover it with the slightly cooled glaze. Return it to the refrigerator for 15 minutes to let the glaze set. Then decorate with cherries as desired. The classic "Drunken Cherry" cake is ready!
