Description

Homemade baked goods for tea. The “Drunken Cherry” cake is best prepared the day before the celebration, so that it can soak overnight in the refrigerator. As for decorating the cake, you can let your imagination run wild. Serve it cooled or slightly warm.

    1. Rinse the cherries under running water. Immediately set aside a handful for garnish. Remove the pits from the remaining cherries.

    2. Place the pitted cherries in a bowl and pour rum over them. Let sit for an hour. Then drain the cherries into a colander over a pot, leaving the rum.

    3. Preheat the oven to 180 °C. Grease the two sponge‑cake pans with butter or oil, then dust them with flour.

    4. Using a mixer or blender, beat 4 tbsp butter, 1.5 cups sugar, 2 eggs and vanilla. Beat for 8‑10 minutes, then add warm milk. Mix well again.

    5. In a separate bowl, mix the flour, cocoa, a pinch of salt, and the leavening agent. Sift the resulting mixture into the beaten batter.

    7. Pour the prepared dough into the molds and bake in a preheated oven at 180 °C for half an hour. Check doneness with a wooden toothpick—it should be dry.

    9. Prepare the frosting. Using a mixer or blender, beat 200 g of butter with three cups of powdered sugar and a few pinches of salt. Do not start beating at high speed right away, as a white cloud of powder will rise above your head. Gradually add the cream cheese while continuing to beat. Finally, add the cherry syrup. Chill the finished frosting.

    11. Soak the bottom layer of the cake with the rum remaining from the cherries. This can be done with a pastry brush. Then spread 1/4 of the cream, on the cream – a layer of drunk cherries.
