Description

Homemade dessert for tea. This cake is familiar to many from childhood. The rich flavor of the cream combined with tender, moist cake layers, all topped with chocolate glaze—can anything be more delicious? I highly recommend trying your hand at being a pastry chef and making the original "Prague" cake at home. Serve warm or chilled. Perfect with tea.

    1. So, there are many steps, but actually none of them are very difficult. Warm up some water and dissolve cocoa and coffee in it.

    4. Add the flour sifted with salt and baking powder in small portions. Mix thoroughly to prevent lumps from forming.

    5. Put the egg whites into a separate bowl and, with a pinch of salt, beat until stiff peaks form.

    6. Carefully fold the egg whites into the batter, mixing gently with a spatula to maintain the airy texture.

    7. Divide the dough into two equal parts (or you can bake one cake layer and then cut it into 4 pieces). Pour into a greased and floured pan. Bake at 180 degrees Celsius for about 45–50 minutes, until a dry toothpick comes out clean. Do not open the oven during the first 30 minutes!

    8. Cool the baked layers on a wire rack, then cut them with a sharp knife to make 4 layers.

    9. In a small saucepan, combine the egg yolks, a little water, and condensed milk.

    10. Sim over very low heat, stirring constantly, until the mixture reaches a uniform consistency. Remove from heat and add chocolate. It's very convenient to use chocolate drops, or chop a chocolate bar finely. Stir thoroughly until the chocolate is completely melted.

    11. In a separate bowl, beat the softened butter. Gradually add the chocolate mixture, constantly beating, until a smooth cream forms.

    12. Now we can assemble our Prague Cake. Generously spread the cream between the cake layers.

    13. Spread the remaining cream on the sides and top. Smooth it with a spatula and refrigerate.
