To make a vegan cake at home, we will need: 1. Two greased baking pans.

2. Sift the flour thoroughly through a sieve together with the baking powder.

3. Add sugar, vegetable oil, and water to the flour. Mix well: the dough should not be too thick (for comparison — slightly thicker than sour cream; if the dough is too thick, add a little water).

4. Divide the dough into two parts. Turn on the oven, set the temperature to 180 degrees, bake for about 30 minutes. Bake two cake layers.

5. Prepare the sauce: pour the juice into a saucepan, add sugar and semolina. Continuously stirring, bring to a boil. Once the juice boils, remove the saucepan from heat and let the mixture cool.

6. Place the saucepan with the cream into a bowl of cold water and, using a mixer, whip it into a mousse.

7. Assemble the cake: take one cake layer, optionally soak it with syrup (for example, syrup from canned peaches), then spread with mousse. Add a layer of fruit. Top with the second cake layer, similarly spread with mousse and decorate with fruit. Place the cake in a cool place to chill and allow the layers to soak in the cream.
