Description
1. Marshmallow fondant recipe (ingredients listed for 3 portions of fondant: 1 for the tablet base, 1.5–2 for cake decoration). Melt marshmallows in a deep bowl in the microwave (about 2 minutes), then gradually add sifted powdered sugar to the mixture until it becomes thick enough to knead by hand. Knead the fondant until smooth, elastic, and pliable. Wrap it in plastic wrap or use immediately. 2. Preparation of light mousse for the "Tablet" cake. Soak gelatin in cold water and let stand for 10 minutes. Then drain the water, pour 25 ml of hot water over the gelatin, and stir until the gelatin crystals are completely dissolved. Beat one egg with 2 tablespoons of sugar until stiff peaks form. Mix the juice of half a lemon with 1 tablespoon of sugar until fully dissolved. Combine the beaten egg mixture with the gelatin and lemon juice, stirring constantly. Then beat the cream until stiff peaks form and gently fold it into the egg mixture in small batches. Prepare the mousse in advance so it has time to chill and thicken. 3. White chocolate and cream cheese frosting for coating the cake. Prepare using white chocolate, cream cheese, and butter. Melt the chocolate, broken into pieces, over a water bath, then let it cool. Using a fork or mixer attachments, beat the softened cream cheese until smooth. Gradually add the cooled chocolate, then mix in the butter and blend until smooth. The cake is ready. Serve.

To create this unique cake, you'll need to prepare in advance. In particular, make the tablet base from fondant 2–3 weeks before the event, so it has enough time to dry. Roll out the fondant to a thickness of 5–7 millimeters. Using a cardboard template and a sharp knife or scalpel, cut a 240 by 185 mm rectangle from the fondant, slightly rounding the edges to ensure clean sides. Next, spray the base with silver edible food spray, cover it with parchment paper, and leave it in a dry place until the day you assemble the cake. The most vivid result will be achieved by using an edible image—a picture printed with an edible printer onto rice paper. To transfer it onto the fondant, simply mist the surface with water and, smoothing from the center outward, carefully apply the printed paper (using dry hands).

It's advisable to prepare the congratulatory message in advance. You can cut it out from fondant using special cutters. Alternatively, you can make a simple cardboard template (just print the desired text on a printer and cut it out from cardboard). If desired, you can also coat it with edible silver spray paint and let it dry, covered with paper.

To imitate a tablet box, use sponge cake layers. It's best to prepare the batter for each layer immediately before baking to achieve uniform, evenly risen cakes. The sponge cake batter is quite simple to make. Beat eggs with sugar using a mixer until thick and foamy. Sift the flour and mix in the baking powder. Gradually add the flour mixture to the egg-sugar mixture, carefully stirring with a spatula until you obtain a smooth, homogeneous batter.

Each cake layer is baked in a rectangular pan lined with parchment paper. The oven should be preheated to 225 degrees; baking time for one layer is 5–8 minutes. While one layer is baking, prepare the batter for the next.

Remove the baked crust from the pan together with the parchment paper and let it cool.

Start assembling the cake! Take the first cake layer, place it on a cake stand, trim the edges evenly, and thoroughly soak with apple juice. Next, using about half of the chilled airy mousse, spread it over the top of the cake layer and arrange pieces of canned fruit on it. Level the second cake layer as well, soak it with juice, place it on top of the first one, generously spread jam over it, then add the remaining half of the mousse on top. Place the third cake layer on top of the mousse.

Cover the entire surface of the cake with white chocolate and cream cheese frosting, then refrigerate for several hours, or preferably overnight. Once the cake has set well, carefully smooth the entire surface, shaping the side and top edges, then return the cake to the refrigerator for another 20–30 minutes.

Roll out the fondant to a thickness of 3-4 mm. The size of the sheet should be about 60*50 cm. Then carefully transfer the fondant onto the cake using a rolling pin, smooth the surface with a special smoother, and trim off any excess fondant at the bottom of the cake.

Now decorate the cake with a tablet model and inscriptions. To secure the decorations, use plain water: it will work like glue.

If you don't have the option to use rice paper printed with an edible printer with the finished image, you can tint the fondant in the desired colors and manually model the tablet yourself.
