
Selyeznev's Cake
Description
The dish is prepared without unnecessary complications. The "Pavlova" cake is very easy to make, and turns out delicious and beautiful. This dessert can be prepared by a man as a surprise for his beloved (for example, for March 8th). Follow this recipe, and the surprise will be a great success. The ready dessert can be served at the table.

Step 1
Chill the egg whites and beat them with a pinch of salt. Gradually add powdered sugar and (optional) a little lemon juice, beating the whites until stiff peaks form.

Line 2 baking sheets with parchment paper. Place the beaten egg whites into a piping bag and pipe them in a spiral to form 2 identical circles.

Bake the meringue layers for about 1 hour at 100 degrees.

From the last 5 ingredients, prepare a custard cream: in a bowl, mix eggs, sugar, 1 tbsp flour, and 1 tbsp starch. While stirring, add boiling milk and cook the cream over low heat for 2–3 minutes until thickened, then let it cool to room temperature.

Cool the ready meringue layers on a rack on the table.

Place one cake layer on a serving plate and spread a layer of raspberry jam over it.

On top of the jam, spread the cooled pastry cream, then arrange sliced fruits and fresh berries on the cream.

Cover the fruits and berries with the second meringue layer, spread with custard cream, and decorate the top with fresh berries.
