
Pavlova Cake

The recipe won't take much time. This delicate and light meringue-based cake with airy buttercream and fresh berries will enhance any celebration. The famous Pavlova dessert serves as the foundation for this cake, with a few small additions. Coffee adds a subtle flavor and aroma to the meringue that you will surely love. Serve chilled.

In a bowl, mix 6 tablespoons of sugar, starch, and coffee.

Separate the egg whites from the yolks. The eggs should be cold.

And we start beating the egg whites at a low speed, gradually increasing the speed. Beat until stiff peaks form.

And now gradually add the sugar and coffee mixture in small portions, beating well after each addition. Continue beating until the sugar is completely dissolved.

On parchment paper, draw two circles with a diameter of about 20 cm.

And pipe or spoon the meringue mixture onto a baking sheet. Bake in a preheated oven at 150 degrees Celsius for 1 hour. Then open the oven and let the meringues cool inside.

For the cream, beat the cream with the remaining sugar. If you prefer a sweeter cream, add more sugar.

Spread 2/3 of the cream over the cooled meringue, then top with the second layer.
