
Cherry Cake
Description
The recipe won't take much time. Some call this cake "Sancho Pancho," others "Don Pancho," and many simply "Pancho." Originally, this cake was made with pineapple, but a cherry version is also popular—it pairs wonderfully with the sponge cake and sour cream frosting. Today I'll share the recipe with you. Serve it warm or chilled. Perfect with tea.

Prepare all the necessary ingredients.

Mix the eggs with sugar.

Beat with a mixer for about 8-10 minutes until the mixture lightens and increases in volume.

Mix the flour with a few strokes. Pour the resulting batter into a baking pan and place in the oven for 40 minutes. Tip: put the batter into a cold oven, then heat it to 180 degrees.

While the cake layer is baking, prepare the cream. To do this, beat the sour cream with 1 cup of sugar until thickened.

With a sharp knife, cut the cooled cake into 2 parts. Place the bottom part on a flat plate.

Cut the top layer into cubes.

Dip each piece into the sour cream cream and place it in a heap on the bottom crust, layering with canned cherries between the layers.
