
Strawberry Cake
Description
Homemade dessert for tea. This cake reminds me of the "Monomakh's Cap" due to its similar shape. The dessert is very tasty and made from simple, readily available ingredients, so I often prepare it for my family.

1. For the sponge cake: crack the eggs, add salt and beat at low speed, then increase the speed.

2. When the foam appears, add granulated sugar in portions and continue whisking.

3. When the eggs are well beaten, add to them a glass of milk and sunflower oil in turn, mixing each time.

4. Sift the flour and mix it with the baking powder.

5. Add the dry ingredients to the liquid mixture, gently stirring with a whisk.

6. Line the baking tray with parchment paper, lift one side, and pour in half of the sponge cake batter.

7. Mix the remaining dough with the cocoa powder and stir thoroughly.

8. Pour the chocolate batter onto the second half of the baking sheet, smooth it with a spatula, and place in a preheated oven at 180 degrees for forty-five minutes.

9. Let the sponge cake cool completely, then use a plate or any round form to cut out a circle.

10. Cut the biscuit round into 2 layers, and dice the remaining scraps into small cubes.

11. For the cream: in a bowl, whip sour cream with granulated sugar. Pour cold water over gelatin. Let it sit for several minutes to swell, then dissolve it in the microwave. Add a couple of tablespoons of sour cream, then pour into the main mixture and stir.

12. Spread one of the cake layers with cream, then place biscuit cubes on it, previously dipping them into the cream. Wash the strawberries and place the berries between the biscuit cubes.

13. Form a mound like this and spread the remaining cream over it. Refrigerate the cake for several hours.

14. For the glaze: pour cold water over the gelatin and leave to bloom. Place granulated sugar, cocoa powder, and milk (200 milliliters) into a saucepan. Cook over low heat for 5 minutes, then let cool and add the bloomed gelatin, stirring well.

15. Pour the cooled glaze over the cake. Decorate with strawberry berries, then refrigerate until the glaze sets.
