
Oatmeal Cake

Grind the oatmeal in a blender or pass it through a meat grinder. Add the flour sifted through a sieve, cinnamon, half a cup of sugar, and mix thoroughly. Add the melted butter, eggs beaten with the remaining sugar, kefir, and baking soda. The batter should be slightly runny.

Divide the dough into three equal parts. Pour each part into a baking pan and bake in the oven at 200 degrees for about five minutes. Let the layers cool. Handle them carefully, as the layers turn out quite brittle and fragile.

While the cake layers are cooling, prepare the sour cream frosting. Using a mixer, beat the liquid sour cream with sugar until smooth. Spread the frosting between the layers.

Sprinkle the top of the cake with coconut flakes. Then refrigerate it for a couple of hours so the cake layers can soak up the moisture thoroughly. Serve the cake!
