In any convenient glass or metal bowl, mix the sour cream with sugar. Add the melted butter to the mixture, then incorporate the sifted flour. Knead the dough.

Divide the resulting piece of dough into six to seven equal parts.

Roll out each piece of dough as thinly as possible using a rolling pin or a bottle. Then, cut out even circles using a special cutter or a regular plate. Do not discard the leftover dough scraps, as they will be useful later.

Preheat the oven to 200 degrees. Place the round pastry layers on a parchment paper or on a baking sheet generously greased with vegetable oil. Prick them several times with a fork and bake each for ten minutes, placing the remaining dough scraps alongside the layers.

Place the remaining sour cream, powdered sugar, vanillin (which can be replaced with vanilla sugar), and fat-free cottage cheese into the blender container and thoroughly blend all the ingredients. This will be your cake filling. Spread the cooled cake layers with the resulting mixture. Crumble the baked dough scraps and use them to coat the cake on all sides. Refrigerate the cake for several hours to let it soak.
