Description
Perfect for tea and coffee. This classic "New York" cheesecake turns out perfectly every time if you use the right cheese. This recipe holds a place of honor in my collection, as the cheesecake always turns out incredibly delicious. Despite the lengthy and meticulous preparation, the result will justify all your efforts. You can decorate it with syrup or seasonal berries/fruits. Additionally, any topping pairs well with this cheesecake.

1. The listed ingredients are calculated for a cake in a 23-centimeter mold. For this dessert, use soft "Philadelphia" cheese; you can also use "Mascarpone" or a similar cheese.

2. We need to make the biscuit base right away. To do this, place the biscuits in a blender and grind until they turn into crumbs. Add melted butter and mix until well combined.

3. Take a baking dish and place the crust (including the edges). For 100% certainty, line the crust with parchment paper. Place in the freezer until the cookie with butter is completely set.

4. Meanwhile, prepare the cream: using a mixer, combine the cheese with sugar. All ingredients should be at room temperature. Add the eggs one at a time, incorporating each completely before adding the next. The result is a smooth and fluffy cream.

5. Then add sour cream, vanilla extract or vanilla powder, and lemon zest (lemon juice can be used instead). Beat everything again with a mixer until smooth.

6. Pour the cream into our base and spread it evenly over the entire surface. Tightly wrap the baking pan with foil to prevent water from getting in. Preheat the oven to 180 degrees. Place the baking pan into a larger roasting pan with high sides. Pour water into the roasting pan until it reaches halfway up the sides of the cheesecake pan. Bake for about 60 minutes at 160 degrees.

7. After the specified time has passed, turn off the oven and open the door. Leave the cheesecake in the oven to cool completely in this position.

8. After completely cooling, cover with film and refrigerate for 8 hours.

9. Then remove the mold and decorate the cheesecake to your liking. I used seasonal fruits and berries.
