The recipe won't take much time. The "Natalie" cake at home is a great option for lovers of sweet baked goods. If desired, instead of chocolate glaze, you can top it with cream of your choice.

1. The recipe for "Natalie" cake starts with the biscuit. First, beat the eggs until their volume increases, then gradually add sugar, continuing to whisk the mixture. Sift the flour and cocoa, then incorporate them into the egg mixture. Pour the prepared batter into a baking pan.

2. Bake the cake layer for about 30-35 minutes at 170-180 degrees. The finished sponge cake should be thoroughly cooled.

4. To prepare the syrup, combine 150 grams of sugar and 250 grams of water. Place over heat and cook over low heat until the sugar dissolves completely. Then cool thoroughly.

5. Beat the egg whites with a pinch of salt until stiff peaks form. Meanwhile, prepare caramel from 150 grams of sugar and 50 grams of water.

6. Gradually, in a thin stream, pour the caramel into the egg whites, continuing to beat the mixture.

7. Now it's time to prepare the cream. Melt the chocolate (about 180 grams) over a water bath. Add about 180 grams of whipped egg whites and 50 milliliters of cream. Mix thoroughly until smooth. Whip 400 milliliters of cream to stiff peaks and fold it into the chocolate mixture. Gently stir until well combined, then refrigerate until thoroughly chilled.

8. It remains only to assemble the "Natalie" cake at home. Place one cake layer at the bottom and soak it with sugar syrup. To help the cake hold its shape well, you can place a ring from a springform pan around it. Generously spread the layer with cream and cover with the second cake layer. Repeat the same process with the remaining layers. Generously cover the top layer with cream as well. Place the cake in the refrigerator for about 1 hour.

9. You can decorate the top of the cake as desired. One option is chocolate glaze. To decorate the sides, apply the glaze to a strip of ribbon and press it firmly against the cake. If the ribbon does not adhere well, you can put the cake ring back on.
