Description
The "Nastenka" cake is perfect for everyday afternoon snacks and Sunday family lunches. I consider the "Nastenka" cake to be healthy, as it's made with yogurt and dried apricots! Overall, it can be regarded as a variation of semolina cake. The main challenge is baking the layers properly—two times for 40 minutes each. Everything else is easy! Good luck! Serve warm or chilled. Perfect with tea.

Beat eggs with sugar, add vanilla, baking powder, semolina, and softened butter with yogurt. Mix the batter with a mixer until no lumps remain. Divide the batter into two parts and pour into a round pan. Bake each cake layer at 180°C for about 40 minutes.

Wash the dried apricots and dry them.

Grind the dried apricots in a blender or meat grinder.

Mix dried apricots with butter.

Cut each cake layer in half and spread each layer with apricots and butter, except for the top cake layer.
