
Meringue Cake
Description
Perfect with tea and coffee. Since "Napoleon" is made with meringue, you can serve it with fragrant tea or unsweetened coffee. Remember that this cake definitely needs time to soak, otherwise it will turn out a bit dry and crunchy in texture.

Prepare the listed ingredients. Buy meringue at the store or make it at home using one of the recipes on the website.

Chill the butter in the freezer. Pour the sifted wheat flour into a bowl, reserving a little flour for the cream. Add sugar and salt. Grate the chilled butter on a coarse grater directly into the flour. Pour in ice water and knead into a firm dough.

Divide the dough into equal parts and roll them out into thin layers. Trim the layers using a plate and prick them with a fork so they don’t puff up during baking. Preheat the oven to 200 degrees and bake all the cake layers for 7–10 minutes until golden brown.

Pour milk of any fat content into a cauldron or a saucepan with a non-stick bottom, add the sugar. Add the egg yolks and whisk thoroughly.

Pour in the remaining flour and beat once more. Add the flour to cold milk! Place the container on the stove and cook the cream for about 10–15 minutes until it reaches the desired thickness. If desired, you can add vanilla sugar or another flavoring to the cream.

Stir in the butter and cover the cream with plastic wrap so that a skin does not form on it while it cools. Chill the cream for about 1 hour in the cold.

Spread a little cream on the cake layer and coat the entire surface, cover with another cake layer and apply the cream again. Break the meringue if it is round and place it on the cream. Cover with another cake layer and so on, every other layer.

Crumble two cake layers by hand or using a grinder. Spread cream over the sides and top of the cake, sprinkle with crumbs, and place the dessert in the refrigerator for about 4–6 hours, or better yet, overnight to soak.

When serving, decorate the "Napoleon" with colorful meringues and brew some delicious tea.
