
Beer Cake
Description
The pastry is prepared simply and quickly. For the "Napoleon" to turn out juicy, it must soak for about 6–8 hours in the refrigerator, or better yet—overnight. Pastry made with beer turns out more crumbly and velvety in taste, but use light beer, not dark. Serve chilled or slightly warm.

Prepare the listed ingredients. Slightly freeze the butter so it grates better. Instead of butter, you can use high-quality margarine.

Pour the wheat flour into a deep bowl, reserving 3 tbsp for preparing the cream. Add sugar and salt to the bowl and grate in the butter. Mix everything thoroughly until crumbs form.

Pour in the beer and form a firm dough. Place it in the refrigerator for 20 minutes.

Then remove and divide the dough into portion-sized pieces. Preheat the oven to 200 degrees. Roll each piece of dough into a sheet and cut out a circle using a plate. Prick the dough circle with a fork in different places.

Bake the cake layers in the oven for 8–10 minutes until lightly browned, but do not overbake. Stack them on top of each other and let them cool.

While the cake layers are cooling, prepare the cream. Pour milk of any fat content into a saucepan or pot, add sugar and vanilla sugar, add the egg yolks, and whisk. Add the wheat flour and whisk again. Then place the pot on the stove over medium heat.

Cook the cream to the desired thickness, stirring for 8–12 minutes. Then stir in the butter, cover with plastic wrap, and chill for 1 hour in the cold. After chilling, the cream will stabilize.

Place the first cake layer on a plate and generously spread it with cream. Immediately set aside two cake layers; they will be needed to make the crumb topping.

Crumble them by hand in a separate container.

Assemble the entire cake, then coat its sides and sprinkle crumbs on top. Place it in the refrigerator overnight.
