Classic Cake
Description
Perfectly pairs with tea and coffee. The classic "Napoleon" cake is quite easy to make at home. The combination of tender layers with custard cream is simply amazing! By the way, you can add lemon both to the dough and to the cream to enhance the sweet flavor. And although many don't consider this dessert festive, its taste definitely proves otherwise.
Instructions
- 1
Step 1

1. Sift flour and a pinch of salt into a deep bowl.
- 2
Step 2

2. Grate the cold butter on a grater. I do not recommend using margarine, so as not to overpower the delicate flavor of the finished dessert.
- 3
Step 3

3. Mix thoroughly until a uniform crumb forms.
- 4
Step 4

4. Cut the lemon in half, place it in the microwave for 20-30 seconds, then squeeze the juice. Strain through a sieve to remove pulp or seeds.
- 5
Step 5

5. Add about the same amount of water and pour it into the bowl.
- 6
Step 6

6. Knead a firm dough, thoroughly work it. Wrap in plastic wrap and refrigerate for some time.
- 7
Step 7

7. Pour half of the milk into a small saucepan or skillet and place over heat. Add sugar.
- 8
Step 8

8. In the second half, dissolve the sifted flour.
- 9
Step 9

9. Add the eggs to the same mixture and beat everything until smooth.
- 10
Step 10

10. When the milk comes to a boil, pour in the cold milk, stirring constantly to prevent lumps from forming.
- 11
Step 11

11. Without stopping stirring, leave on the heat until the cream thickens.
- 12
Step 12

12. Take out the dough, cut it into equal pieces. The ideal number is 16, but you can choose a different amount. Roll out each piece very thinly.
- 13
Step 13

13. You can cut the cake layers to fit the pan right away, or you can bake them as they are. Place in a preheated oven at 170 degrees for about 5 minutes (subsequent layers will bake faster).
- 14
Step 14

14. While still hot, cut the cake layers to the size of a plate or lid, for example, so they are all the same size.
- 15
Step 15

15. Crush the leftover cake pieces into crumbs. That's it—we now have everything we need to assemble the classic homemade "Napoleon" cake.
- 16
Step 16

16. Place the cake layer and generously spread it with cream. Be generous, otherwise the cake will be a bit dry.
- 17
Step 17

17. Repeat the process with all the layers. Sprinkle the edges and top with crumbs. That's the whole secret of making a classic "Napoleon" cake. Let it soak for 3-4 hours, but preferably overnight. Then it will literally melt in your mouth.
