Instructions

Step 1

Into a large bowl, sift the flour through a sieve several times. Add baking soda to it; there's no need to neutralize it, as the sour cream will do that. Pour 200 grams of high-fat sour cream into the flour, add half of the sugar, and mix thoroughly, kneading until you get an elastic dough.

Step 2

Divide the dough into eight to nine equal-sized pieces and roll them into balls.
- 3
Step 3

Roll out each ball on a work surface into a thin layer. Cut it to the size of the pan you'll use to cook the pancakes. It's most convenient to do this using the lid of the pan.

Step 4

Heat the skillet on the stove. Place the pancakes on it one by one and cook each side for two minutes until a golden-brown crust forms.

Step 5

For the cream, beat the remaining sour cream and sugar with vanilla. It is very important that the sour cream is high-fat, at least 25%. Otherwise, the cream will be too runny and will spread out. Spread the cream on each cake layer, stacking them in a pile.

Step 6

For the coating, crush any cookies into crumbs—for example, use shortbread cookies. Coat the cake on all sides and place it in the refrigerator to soak; it's best to leave it overnight.
