Cake for a Ruby Wedding

Description

You'll definitely like this recipe for a ruby wedding cake. I'm generally not good with complicated baking: I'd rather make something simple and quick, like cupcakes or muffins. But this cake was so easy to prepare that I didn't even notice when I was already attaching the last little flower! Do give it a try—this cake turns out moist and delicious. Serve it with tea or coffee.

    1. Chop all the dried fruits in a blender until you get a smooth, thick paste. Add eggs, milk, sugar, and melted butter, and mix again until smooth. Then add flour, baking soda, cocoa, and vanilla. Mix once more.

    2. Pour the dough into two springform pans—one larger and one smaller in diameter. Bake at 180°C until a toothpick inserted comes out dry. The smaller cake was ready in 35 minutes, the larger one in an hour.

    3. Let the cake layers cool. Then stack the smaller layer on top of the larger one (you can glue them together with jam or honey if you're concerned about the stability of the structure) and cover with marzipan or fondant.

    4. All my flowers were white, so I diluted red food coloring to different concentrations and soaked the flowers for varying lengths of time: some longer, others shorter. Attach them to the cake from dark to light (or vice versa).
