Description
Homemade treats for tea. Carrot Cake "Carrot Miracle" is the dessert you must definitely try! If you have kids at home who don't particularly like carrots but love sweets, this is yet another reason to bake this wonderful cake. Don't worry if the dough seems too dry after adding flour—once you mix in the carrots and egg whites, it will reach the right consistency, as the carrots will release their juice. Give it a try, and you'll surely succeed!

1. Sort the walnuts, removing debris and husks. Toast in a dry skillet for 5-7 minutes. Crush with a rolling pin.

2. Peel the carrots and grate finely.

3. Mix brown sugar with three egg yolks.

4. Add vegetable oil and whisk. Don't worry if the sugar does not dissolve.

5. Add the flour mixed with cinnamon, a pinch of salt, baking powder, and baking soda to the resulting mixture. Stir.

6. Next, add egg whites, nuts, carrots, and orange zest. Mix until smooth.

7. We need to bake two cake layers, so pour half of the batter into a pan and bake at 180°C for 35–40 minutes. My pan is 24–26 cm in diameter. Then bake the second layer.

8. The finished cake layers need to be completely cooled.

9. Prepare the cream using mascarpone, powdered sugar, and vanilla flavoring. Simply mix everything together with a silicone spatula.

10. Let the cooled cake layers cool completely, then cut each into 2 parts. Assemble the cake: place a cake layer and spread it with orange jam.

11. Spread the mascarpone cream over the jam. Place the next cake layer and repeat the same steps, and so on.

13. When the cream has set, spread orange jam over the top of the cake and decorate as desired.
