Description

Homemade pastry for tea. This marvelous cake is made on a base of condensed milk, which in Germany is called “Milch Mädchen”, that is, milk girl. The “Plombir” cream, prepared with sour cream, gives a slight tang to this fairly sweet pastry, creating a wonderful flavor palette. There is nothing complicated about making such a cake, but it will take time. I assure you, your efforts will not be in vain. The “Plombir” cream holds its shape well, and it can be used to decorate the cake just as well as meringue or whipped cream.

    Prepare the ingredients for making the cake.

    Knead the dough. Crack the eggs into a bowl.

    Whisk the eggs well with a whisk.

    Add condensed milk.

    Melt 50 grams of butter and add it to the dough. Also add baking soda neutralized with vinegar or lemon juice.

    Knead a smooth, uniform, not too thick dough.

    On parchment, draw a circle with a diameter of 18–20 centimeters and place 2 tablespoons of dough on it. Spread the dough over the paper.

    Bake the layers in an oven preheated to 175 °C for 7–8 minutes each. Do not stack the baked layers on top of each other, so they don’t stick together. You will get 7–8 layers.

    Prepare the “Plombir” cream for the cake. In a heavy‑bottomed saucepan, crack the egg, add sugar and vanilla sugar.

    Mix the sugar with the egg and add sour cream.

    Add 3 tablespoons of flour with a generous heap.

    Whisk together sour cream, sugar, vanilla sugar and flour. There should be no lumps.

    Place the pot on the stove, stirring, and bring the mixture to a thickened consistency. It will take 7–8 minutes. Use a heat slightly below medium so the cream doesn’t burn. You can cook the cream in a double boiler. Cool the finished cream.

    Beat the softened butter with a mixer for 3–4 minutes until it reaches a light, white consistency.

    Add the whipped butter to the custard one tablespoon at a time, continuing to beat. The “Plombir” cream is ready.

    Place the first layer on a dish and spread it with cream.

    Do the same with all the layers. Spread the cake with cream on the sides.

    Decorate the cake to taste. I use Italian meringue. But chopped nuts, cookies, chocolate will also work.
