Description

The pastry is prepared simply and quickly. A colorful holiday dessert can be made even without baking. This is especially relevant in the summer, when you really don’t want to turn on the oven. The cake is ready in 1.5 hours, or even faster if you prepare the cream in advance. But it should soak for at least 4 hours in the cold. It can be served with tea or coffee.

    Prepare the listed ingredients.

    Pour milk of any fat content and variety into a saucepan or pot with a non-stick bottom. Add two egg yolks, pour in the sugar, and whisk everything together.

    Add the wheat flour and thoroughly mix it into the liquid. Mix the flour only into cold milk; otherwise, in a hot liquid it will immediately clump into lumps.

    Place the container on the stove and heat the contents until thickened for about 12–15 minutes, remembering to stir. Stir the butter and lemon juice into the brewed cream, cover the container with plastic wrap, and set it in the cold for about 1 hour. The cream will thicken even more as it cools.

    Pour one-third of the shortcrust crumbs into a springform pan and level them out. If you prefer a finer texture, grind the crumbs more finely.

    Spread half of the cooled custard and gently smooth it out with a silicone spatula.

    Sprinkle another third of the crumb mixture over the cream layer and smooth it out. Then add a layer of cream, and finally—another layer of crumbs. Place the pan in the refrigerator for 4–6 hours, or better yet—overnight. During this time, the crumbs will “draw out” excess moisture from the cream and soak it in, while the cream itself will stabilize.

    After the specified time, remove the mold and serve the no-bake "Medovik" to the table. The dessert slices beautifully into portions.
