Description

The baking is simple and quick. Honey cake ("Medovik") is a classic of domestic confectionery and one of the most popular cakes in Russia. Because of its immense popularity, the cake has acquired countless variations and interpretations; different cooks make it in different ways. However, the very simple Medovik cake recipe I am sharing is the classic recipe for this wonderful cake. The recipe has stood the test of time, so you can be sure it will be delicious. The baked goods are ready. Serve at the table.

    Let's prepare the ingredients.

    Take a small bowl and whisk the eggs with baking soda in it.

    Take a deep saucepan, add the honey and 1 cup of sugar. Place over low heat.

    Over low heat, stirring, bring the mixture to a boil. By then, the sugar will have completely dissolved in the honey.

    When the mixture begins to simmer slowly, add the egg and baking soda mixture prepared at the very beginning to the saucepan. Stir quickly with a spoon and continue heating the mixture. When the mixture increases in volume and becomes foam-like, remove it from the heat.

    Gradually add the flour to the resulting mixture in small portions. Mix the dough with a spoon (kneading this cake dough by hand is inconvenient).

    You should end up with a dense, sticky dough.

    Divide the resulting dough into 10 equal portions and roll each one out thinly. Do this on a floured work surface.

    From the rolled-out sheets of dough, cut out round bases. You can use a plate of the right diameter as a template. Don’t throw away the dough trimmings — we’ll still need them. In general, roll this dough out quickly — it stiffens very fast and loses its elasticity.

    Place the round cake layers together with the trimmings in an oven preheated to 200°C.

    Bake for exactly 5 minutes, then remove from the oven.

    Set the layers aside for now, and rub the trimmings by hand into coarse crumbs.

    Now you need to prepare the cream. Mix the sour cream with a glass of sugar.

    Beat lightly with a mixer until fluffy.

    Assemble the cake. Place the first layer on a large flat plate (preferably the most even one, since it serves as the base for the whole structure) and spread it generously with frosting.

    Using a simple method, assemble the cake by stacking the layers on top of each other and spreading cream between them.

    Take half of the crumbs from the cake trimmings, add a tablespoon of cream, and mix.

    Using the resulting moist crumbs, thoroughly coat the cake on all sides, giving it a neat shape and smoothing out any uneven spots, etc.
