Instructions
- 1
Step 1

To make honey dough, prepare the ingredients. Sift the flour through a fine sieve.
- 2
Step 2

In a heavy-bottomed saucepan, combine 100 grams of sugar, honey and 180 grams of butter.
- 3
Step 3

Place a saucepan over medium heat. Melt the ingredients and wait until the sugar has fully dissolved. Stir the mixture and add the baking soda. The mixture will lighten and begin to foam.
- 4
Step 4

Whisking the mixture constantly, reduce it until it turns caramel-colored.
- 5
Step 5

Remove the saucepan from the heat and let the mixture cool slightly, about 10 minutes.
- 6
Step 6

Add the eggs to the caramel-honey mixture.
- 7
Step 7

Mix the eggs thoroughly into the honey mixture until they combine into a homogeneous mixture.
- 8
Step 8

Add sifted flour to the sauté pan with the liquid component.
- 9
Step 9

Knead the dough until smooth.
- 10
Step 10

The finished dough is liquid, stretchy, smooth, and a lovely golden color. Its consistency is like pancake batter.
- 11
Step 11

Prepare 2 sheets of parchment paper and place them on a baking sheet. On one sheet, mark a circle 23–24 cm in diameter. Place 6 tbsp of honey dough in the centre of the circle and spread it evenly within the marked diameter. Bake the layer in an oven preheated to 170°C for 10 minutes. Test doneness with a wooden toothpick.
- 12
Step 12

On the second sheet of parchment paper, spread the remaining dough and distribute it in an even layer into a flat cake layer of any shape. Bake at the same temperature for 20 minutes.
- 13
Step 13

Trim the finished round sponge to fit your springform pan. Use the trimmings to decorate the finished cake.
- 14
Step 14

Cut the large cake layer into 1×1 cm cubes.
- 15
Step 15

For the cream, prepare the ingredients. Take the cream and cream cheese out of the refrigerator ahead of time; they should be at the same temperature.
- 16
Step 16

In a bowl, combine vanillin, powdered sugar, and cream cheese. Beat with a mixer until light, fluffy, and smooth.
- 17
Step 17

Add the cream and beat the cream again until it reaches a stable, thick consistency.
- 18
Step 18

Prepare the cake assembly mold. Place the springform ring on the turntable. Lay in the prepared cake layer.
- 19
Step 19

Spread a layer of cottage cheese and cream frosting over the honey cake layer. On top of the frosting, arrange some of the honey cake cubes.
- 20
Step 20

Alternate layers of cream and honey cubes to build the cake, filling the pan completely. For the top layer, spread the remaining cream and smooth the surface. Cover the pan with plastic wrap. Leave the cake in a cool place.
- 21
Step 21

To decorate the top of the cake, prepare caramel sauce. Get your ingredients ready.
- 22
Step 22

Put the sugar in a heavy-bottomed saucepan and pour water over it.
- 23
Step 23

Place the saucepan over medium-high heat and cook the mixture, gently swirling the pan to dissolve the sugar (do not stir the mixture).
- 24
Step 24

Heat the cream in the microwave or on the stove for 1 minute. When the syrup turns amber, add the hot cream to it, reserving 50 ml. The mixture will begin to bubble and foam. Stir it thoroughly so that the syrup and cream combine.
- 25
Step 25

Add the gelatin to the remaining 50 ml of hot cream and stir; set aside to bloom.
- 26
Step 26

Add butter to the cream sauce and mix it into the sauce. Add the gelatin there as well. Strain the finished sauce through a sieve. *(Original phrase «сливочное мало» is corrected as «сливочное масло» — butter.)* Add butter to the cream sauce and work it into the sauce. Add the gelatin there as well. Pass the finished sauce through a sieve.
- 27
Step 27

Pour the finished caramel sauce over the cooled cake. Leave the cake in a cool place to set.
- 28
Step 28

After a while, take the finished dessert out of the refrigerator. Remove the springform ring. Crush the leftover honey cake layers into crumbs.
- 29
Step 29

Decorate the cake using crumbs made from the trimmings and leftovers of the honey cake layers.
- 30
Step 30

The cake matches the taste of classic Medovik, and the caramel sauce makes it even more interesting.
- 31
Step 31

Best wishes to everyone.
- 32
Step 32

One of the main elements of a family tea is cake!
