Description
Perfect for tea and coffee. First, bake the sponge cake. Take 4 eggs, 1 cup of flour, and 1 cup of sugar. Separate the egg whites from the yolks. Beat the yolks with ½ cup of sugar, then add the flour and mix. Now beat the egg whites with a pinch of salt and the remaining ½ cup of sugar. Preheat the oven to 200°C (390°F). Gently fold the beaten whites into the yolk mixture and pour into a pan. Bake the cake layer for 40 minutes at 180–200°C (350–390°F). Once the base is ready and cooled, cut it into 3 parts. Now prepare the soaking cream. Take 1 cup of milk, 2/3 cup of sugar, and 1 tablespoon of flour. Mix everything and cook over low heat, stirring constantly, until it comes to a boil. Now make the mousse. Soak 1 tablespoon of gelatin in ½ cup of milk. Beat a meringue from 3 egg whites, 150 grams of sugar, and ¼ teaspoon of citric acid. Also beat 100 grams of butter with 2 tablespoons of condensed milk. Place the first cake layer at the bottom of the mold and spread with cream. Arrange apricots on top. Add the second cake layer, spread with cream, and top with apricots again. Now combine the mousse ingredients—butter mixture, meringue, and milk with gelatin—and immediately pour over the cake and apricots. Place the third cake layer on top and cover with cream. Refrigerate for a couple of hours. Once the cake has chilled, cut out the shape of a car as shown in the picture: trim the side pieces, flip them over, and place on top. You can brush the entire car shape again with the remaining cream for extra moisture. Now prepare another meringue: 3 egg whites, 150 grams of sugar, and ¼ teaspoon of citric acid. Beat well and pipe the meringue onto the car using a pastry bag. Highlight the windows with melted chocolate, and use round cookies or chocolate for the wheels. Decorate the entire car with meringue using a small "star" pastry tip. The dessert is ready. Serve and enjoy.
