Description
The special feature of this cake is that it requires no baking, and its base is made from ordinary shortbread cookies. This dessert is perfect when you want something delicious but don't feel like using the oven. The cake turns out very tender, I'd even say airy. It can be served with tea or coffee.

1. Break the shortbread cookies into pieces and place them in a blender container, grind into fine crumbs. Melt the butter, pour it over the cookies, and mix thoroughly. Transfer the resulting mixture into a springform pan and press it down firmly, then refrigerate.

2. Transfer the cream cheese to the blender container, add granulated sugar and vanilla, then blend the mixture.

3. Unwrap the chocolate bars and cut them into small pieces, then add them to the cheese. Next, spread the mixture onto the cookies.

4. Soak the gelatin in cold water, then warm it slightly. Whip the cream until stiff peaks form, and mix it with the cooled, swollen gelatin. Whip again, pour into a mold, sprinkle with chocolate shavings, and refrigerate.

5. I keep the finished cake in the refrigerator for several hours, then decorate it with toppings and serve.
