Instructions

Step 1

1. Prepare the ingredients for kneading the dough.
- 2
Step 2

2. Crack all the eggs into a deep bowl, add sugar, and start beating them with a mixer at high speed until a fluffy white foam forms.
- 3
Step 3

3. In a separate bowl, mix the dry ingredients: flour and baking powder. Then sift the flour into the beaten eggs and gently mix the dough with a spatula. Pour the batter into baking molds.

Step 4

4. Bake one sponge cake for half an hour at 160-170 degrees. Once the sponge cake is ready, let it cool, then cut it in half. Repeat the same with the second sponge cake.
- 5
Step 5

5. For the cream, you will need cream cheese, butter, sugar, and vanilla. In a clean and dry bowl, mix these ingredients together using a mixer. Transfer the prepared cream into a piping bag and place it in the freezer to cool slightly.

Step 6

6. Using a blender, puree two mangoes into a smooth pulp; you may sweeten it with powdered sugar if needed. Spread the mango puree on one cake layer. Spread the buttercream on the second layer and place it on top, cream-side down. Repeat this process with the remaining layers.

Step 7

7. Now spread the cream on all sides of the sponge cake, on the sides and top. Using a pastry syringe and the remaining mango, decorate the top of the cake as desired.

Step 8

8. Let the dessert soak for about 40 minutes and serve chilled.
