Description
The baking is prepared simply and quickly. Adjust the amount of cottage cheese and sour cream as you go; the cream should be soft but not run off the cake. Add coconut flakes and dark cocoa powder to the layers. The combination turns out wonderful. Serve cooled or slightly warm.

Prepare the ingredients for the cake.

In a bowl, add sugar, then eggs and salt. Whisk until frothy.

Add softened butter.

Add vanilla liqueur. You can use brandy or another strong and aromatic alcohol, your choice.

Add 4 tbsp of sour cream and mix everything.

Add flour and baking soda. Knead the dough.

Divide the dough into two equal parts.

In the first part, add the shredded coconut and mix.

In the second bowl, add cocoa and mix the chocolate batter.

Transfer the light dough into a silicone mold and place it in a preheated oven for 25 minutes. Bake at a temperature of 180–190 °C.

Also bake the chocolate layer. Let the baked layers cool and cut them lengthwise. You get 2 light and 2 chocolate layers. Trim the top layer and level the layers. The trimmings are needed for decorating the cake.

We prepare the cream. In a bowl, add the cottage cheese, powdered sugar, and most of the sour cream.

Mix with a blender; if the cream is thin, add more cottage cheese, and if it’s too thick—add sour cream.

Assemble the cake, alternating layers with cream.

Place the cherries and cream on the chocolate layer.

The cake is assembled. Now you need to thoroughly coat the entire perimeter and smooth the top layer with cream.

Finely chop the trimmings. You need light and dark crumbs. Sprinkle the cake with the crumbs, creating a design. The cake will soak for 6–8 hours. Leave the finished cake in the refrigerator.
