
Jelly cake
Description
In summer, no one wants to fuss with dough or turn on the oven. But you still need something sweet to serve when guests arrive. The best option is to make a "Summer" cake with gelatin. This light and delicious cake with summer berries is perfect for hot weather. Serve it warm or chilled. Ideal with tea.

First of all, soak the gelatin in cold water and let it swell.

Then slice the sponge cake or cookies into small pieces.

You can use any berries for the cake—strawberries, raspberries, currants, cherries. I'm using strawberries and kiwi—they make a beautiful color combination. Peel the kiwi and cut it into small pieces, wash the strawberries and slice them as well, but not too finely, or they'll release all their juice.

It's better to make this cake in a convex salad bowl. Line it with plastic wrap.

The gelatin has swollen, warm it over a water bath until completely melted. Beat the sour cream with sugar and slowly pour in the cooled gelatin in a thin stream. Beat!!!

Place a small portion of the prepared berries into a salad bowl, pour in a little sour cream with gelatin, then add a layer of biscuit, and pour over it. Repeat this process until all the ingredients are used up. Put the cake into the refrigerator for about 2-2.5 hours.

When the cake has set, turn it over onto a flat plate.

Remove the film and the cake is ready! You can decorate it on top by sprinkling with grated chocolate, or make a glaze. But in my opinion, it's delicious just as it is :)
