Instructions
- 1
Step 1

Prepare the listed ingredients.
- 2
Step 2

Crack the chicken eggs into the bowl of a kitchen mixer, add 1 cup of granulated sugar and salt, and beat thoroughly for 5 minutes at the highest speed of the machine until a fluffy mass forms.
- 3
Step 3

Add the wheat flour and gently fold it in with a silicone spatula or fork, but not with a mixer or whisk, so as not to release air bubbles from the dough. At this stage you can add any flavoring of your choice to the dough. Preheat the oven to 180 degrees.
- 4
Step 4

Grease the baking pan with vegetable oil and pour the sponge cake batter into it. Place the pan in the oven for 20–25 minutes. Bake the sponge cake in a kulich pan.
- 5
Step 5

Remove the hot sponge cake from the oven and tilt the pan onto its side so that the cake does not collapse. Leave it that way until it cools completely.
- 6
Step 6

When the sponge cake has cooled, place sour cream of any fat content, sugar, lemon juice, and a cream thickener into the bowl of a food processor. Be sure to add the thickener, otherwise the sour cream with sugar will become liquid and runny, and you won’t be able to make a thick cream from it.
- 7
Step 7

Whisk everything on low speed for 2 minutes, then on high speed for another 2–3 minutes until thick.
- 8
Step 8

Once the sponge cake has cooled, carefully cut it into three parts, trimming the third part just under the very top so that the seam is closed with cream on top. Soak each part with warm milk or caramel syrup.
- 9
Step 9

Spread a portion of the sour‑cream frosting and smooth it. Cover with the second portion of the sponge cake and spread the sour‑cream frosting again. Finish with the sponge‑cake top.
- 10
Step 10

Carefully spread the remaining cream on top and create drips as if it were sugar glaze.
- 11
Step 11

When serving, decorate the cake with Easter sprinkles and insert a candle into it, then light it. Happy Easter!
