Step 3

Lightly beat the eggs with the sugar, then add the sour cream. Mix these ingredients together.

Step 4

Add the baking powder and flour.
- 5
Step 5

Knead the dough until it has the consistency of thick sour cream.
- 6
Step 6

Spread one third of the dough into a parchment-lined baking tin. Bake the light sponge layer in the oven at 170–175°C.
- 7
Step 7

Step 8

Spread the brown batter into a parchment-lined baking pan. Bake the brown sponge layer in the oven at 170–175 degrees.
- 9
Step 9

Mix the sour cream with confectioners’ sugar, adding as much as you like.
- 10
Step 10

So that your cake does not literally turn into a shapeless heap, here is a way to assemble it. Cut the brown sponge layer into small cubes. Line a deep bowl with plastic wrap, letting the edges hang over the sides, and layer the sponge cubes and sour cream. I added cherries, but that is optional.
- 11
Step 11

Fill the entire bowl in this way.
- 12
Step 12

On top, place the light sponge cake and cover with the edges of the plastic wrap. Put the cake in the refrigerator overnight.
- 13
Step 13

In the morning, take the cake out of the refrigerator. In a heavy-bottomed saucepan, mix the milk, sugar, cocoa, and butter. Heat over low heat until thickened.
- 14
Step 14

Cover the bowl with the cake with a plate and invert the cake onto it. Using a piping bag, drizzle the cake with chocolate glaze.
- 15
Step 15

The “Kucha” cake is ready.
- 16
Step 16

Slice the cake and serve it at the table.
