Description

Baked goods are simple and quick to make. The most popular cake in cafés is “Red Velvet”—people who love the gentlest flavor and a velvety sponge keep ordering it. Try treating your loved ones to this dessert—or better yet, make it together with them, because it’s so easy! All you need is patience. Serve cooled or slightly warm.

    Prepare the ingredients listed. Choose cream cheese that is pliable, smooth, soft, and not sour-tasting.

    Crack the chicken eggs into the bowl of a stand mixer or food processor, add granulated sugar and salt. Beat everything on the highest speed for 3–4 minutes.

    Place the beaten chicken eggs in a deep bowl, pour in kefir of any fat content and neutral vegetable oil. Mix with a whisk.

    Add a couple of drops of bright red food coloring and mix again.

    Add the cocoa powder and high-grade wheat flour. Fold them in with slow, gentle movements.

    Grease the pan with vegetable oil and pour the colourful batter into it. Preheat the oven to 180°C and place the pan in the oven.

    Bake the sponge cake for about 40 minutes, then take the pan out of the oven and turn it on its side. Let the sponge cake cool, wrap it in plastic wrap, and put it in the freezer until morning.

    In the morning, remove it and let it come to room temperature, then slice it into layers of equal thickness.

    Whip heavy cream with a fat content of at least 33% for 3–4 minutes. The main thing is not to overwhip it. Then add powdered sugar and cream cheese. Beat thoroughly on low speed.

    Spread one-third of the cream on the bottom cake layer and spread it evenly.

    Assemble the whole cake and cover it on all sides with cream. Decorate to taste.
