Instructions
- 1
Step 1

1. Prepare all the necessary ingredients.
- 2
Step 2

2. Mix the egg with sugar and beat with a mixer or a hand whisk until the sugar starts to dissolve.
- 3
Step 3

3. Then add the sour cream and mix.
- 4
Step 4

4. Add the baking soda neutralized with vinegar and mix again.
- 5
Step 5

5. Finally, add the flour and mix thoroughly with a whisk until no lumps remain.
- 6
Step 6

6. Divide the dough into 3 equal parts. Mix one part with poppy seeds, the second with raisins, and the third with cocoa.
- 7
Step 7

7. Pour the first part of the dough into a greased pan (I used a 20 cm diameter pan) and place in a preheated oven at 170 degrees for 15 minutes.
- 8
Step 8

8. The first cake layer is ready. It turned out very soft.
- 9
Step 9

9. Bake the second cake layer with raisins in the same way.
- 10
Step 10

10. And this is how it turned out.
- 11
Step 11

11. And finally, bake the chocolate cake layer.
- 12
Step 12

12. It turned out the highest and fluffiest because there were no heavy ingredients in it.
- 13
Step 13

13. Prepare the sour cream frosting. Beat the sour cream with sugar and thickener until smooth and homogeneous. If you have time, place it in a sieve lined with several layers of cheesecloth and let it drain for 3–5 hours; this will remove excess liquid, resulting in a thick cream that doesn't require a thickener.
- 14
Step 14

14. Line a plate with two sheets of parchment paper, slightly overlapping. Place the first cake layer with raisins on it and spread cream over it.
- 15
Step 15

15. Cover with the chocolate cake layer, spread with cream, and top with the final poppy seed cake layer. I trimmed off the dome that formed on the chocolate cake layer during baking so that the layers would lie flat.
- 16
Step 16

16. Now generously cover the top and sides of the cake with the remaining cream.
- 17
Step 17

17. You can decorate as desired. Nuts, fruits, or chocolate shavings will work well here. I use red and white coconut flakes. The result is colorful and festive.
- 18
Step 18

18. Now carefully pull the parchment paper sheets apart in opposite directions – and the plate under the cake remains clean!
- 19
Step 19

19. Let the cake soak for an hour, then it's ready to serve!
