Preheat the oven to 180 degrees. Pour the batter into a baking pan. A 26-centimeter pan is ideal. Tap the pan lightly on the table a couple of times and rotate it to release excess air and prevent the batter from rising too much. Bake for 30–40 minutes.

After baking, cool the sponge cake in the pan. Then remove it and let it sit for 24 hours. After this time, cut it into 3 parts lengthwise.

Prepare panna cotta. Soak the gelatin in cold water. Bring milk, cream, 120 grams of sugar, and lemon zest to a boil, stirring constantly. Add the gelatin mixture and pieces of white chocolate. Wait until everything dissolves, then place over an ice bath until thickened.

Place one part of the sponge cake into a mold with high sides. Grate half of the milk chocolate. Spread one half of the cream onto the cake and sprinkle with chocolate.

Melt 125 grams of dark chocolate with butter over a water bath. Spread the mixture over the top layer of the cake. Refrigerate for 6 hours.

Using a pastry tube, draw a "Colosseum" shape on parchment paper—long enough to match the circumference of your cake and 2 cm taller. Let the drawing cool, then firmly press the chocolate piece against the cake.
