
Strawberry-banana cake with gentle mousse

Place the banana in a convenient bowl and mash with a fork. Add the jam and whole egg. Mix with a fork, then blend with a mixer until smooth.

Beat the egg whites with sugar until stiff peaks form.

Sift the flour with the baking powder and mix it into the dough using a mixer.

In two to three batches, carefully fold the whipped egg whites into the batter using a spatula, using a cutting and folding motion from the bottom up and around.

Carefully pour the batter into the prepared pan and bake in a preheated oven at 180 degrees until done.

Remove the finished cake onto a rack, cool and let it rest for about 2 hours. You can leave it overnight, but cover it with a lid.

Boil the pudding. To do this, mix cold milk with sugar, starch, and egg yolks, whisk well and place over medium heat. Constantly stirring with a whisk, thicken the pudding without bringing it to a vigorous boil. Remove from heat and add vanilla, then stir in the butter. Let cool.

Add a couple of bananas mashed with a fork and whisk well with a whisk. Cover tightly with plastic wrap and cool completely.

Cut the cake into two layers and soak them with a mixture of liqueur, water, and lemon juice.

Place the bottom cake layer into the springform ring and spread slightly less than half of the custard cream on top. Cover with the second layer and press down gently. Freeze for about 15 minutes.

Whip the cream (33%) with powdered sugar into a stiff foam. Dissolve the gelatin according to the instructions in the minimum amount of liquid.

Gently fold the dissolved gelatin into the custard pudding with a spatula. Carefully fold in the whipped cream as well.

Pour the mousse over the crust, smooth the top, and place in the freezer until the gelatin sets – about 15-20 minutes. Then transfer to the refrigerator for an hour to an hour and a half.
