Description

Perfectly pairs with tea and coffee. Actually, preparing the classic "Kievsky" cake at home is quite simple, although the process takes quite a bit of time. It turns out exactly as it should be: with a crispy nut layer, rich cream, and thin cake layers. As for decoration, feel free to let your imagination run wild: add nuts, chocolate glaze, or even cookie crumbs. For example, the baking is ready. Serve at the table.

    1. The sponge cake should be baked in advance; it's best to let it sit overnight. To prepare it, crack the eggs into a deep bowl, add sugar and a pinch of salt.

    3. Add the sifted flour in small portions, gently mixing with a spatula.

    4. Place the dough into a greased and floured pan, and put it into the preheated oven. Bake the sponge cake for about 30-40 minutes, without opening the oven!

    5. When the cake has browned well, check it with a toothpick or wooden skewer for doneness and carefully remove it from the oven. Let it cool slightly in the pan, then transfer to a wire rack and leave for at least 10 hours.

    6. Carefully separate the egg whites from the yolks, place the whites in a deep bowl with a pinch of salt.

Generously spread the cake layer with cream, place the meringue on top, add another layer of cream, then a cake layer, more cream, and finally the last cake layer. Spread cream over the top and sides of the cake, smoothing the surface with a spatula. Let the cake soak for at least 4 hours, but preferably overnight.
