Description

You can make the "Cabbage" cake at home both for a baby's birth and for lovers of this healthy vegetable. Perhaps your first attempt won't be as perfect as you'd like, but you can definitely practice making cabbage leaves even without the cake.

    1. The recipe for the "Cabbage" cake is more of a decorating guide. You can use any type of cake layers you prefer—plain sponge or honey cake, for example. It's best to make the layers not too thick. You'll need to bake 3 layers, each of which should be sliced in half after cooling. The frosting can also be any type you like. Generously spread the frosting between the layers and, if desired, add fresh or canned berries.

    2. If you don't have a small baking pan, cut the cake layers using a pre-prepared template. Combine the trimmings with softened butter and beat thoroughly until smooth. If all cake layers were used and there are no trimmings left, you can slightly trim the bottom and top of the cake. Generously spread the resulting mixture over the entire cake, shaping it into a round form resembling a cabbage head. Now refrigerate the cake for 2–3 hours.

    3. The gum paste needs to be colored and rolled out thinly. To achieve a pattern identical to the real one, place a cabbage leaf onto the gum paste. You can use white cabbage, but it's better to use Chinese cabbage.

    4. To make the pattern print clearly, it's not enough to just press the sheet firmly—roll it with a rolling pin. This way, the homemade "Cabbage" cake will look quite realistic.

    6. These are the fondant leaves you should end up with. They need to be placed onto the cake, pressing them down firmly. The number of fondant leaves required depends on the size of the cake. Attach one leaf on top of another using water to form a cabbage-like head.
