
Caprese Cake
Description
The recipe won’t take much time. In culinary terms, the island of Capri is famous for two dishes—Caprese salad and Caprese cake. I love baked goods more, so here you go—the recipe for Caprese cake :) This cake is not very popular throughout Italy, but in Naples and on the island of Capri they eat it by the kilo. There is a legend that the cake was invented in the 1920s, when a local chef had to make a cake for three Americans who were flying here on Al Capone business. The chef was so nervous that he forgot to add flour to his usual almond cake. But as a result, the cake turned out even tastier than usual. The pastry is ready. Serve it to the table.

These are our ingredients needed to make Caprese cake. Notice how few of them there are—unusual for a cake :)

The first thing we'll do is chop our almonds in a food processor. Not into powder—just into small pieces.

Put the pieces of chocolate and butter into a small saucepan.

Put it on the heat and melt it.

Whisk the egg yolks with sugar.

When the melted chocolate-cream mixture cools slightly, we combine it with almond pieces and whipped egg yolks.

Whisk the egg whites into a foam with a small amount of salt. Beat for 3–4 minutes using a mixer.

We mix the whipped egg whites with the almond-chocolate mixture.

Take a baking pan about 22 cm in diameter, line it with parchment paper, and grease it with butter. Put our dough into the pan and bake for 20–25 minutes at 180 degrees.
