
Pancake cake with cherries
Description
The bake is easy and quick to make. This recipe follows the same idea as the “Monastery Izba” cake, but in this dessert crêpes are used instead of puff pastry. In the classic version of this cake, thick homemade sour cream with sugar or icing sugar is used. I suggest making it with a cream of cream cheese, heavy cream, and icing sugar. You can use any cream cheese. You can even use regular cottage cheese, but you will need to rub it through a sieve or blend it until smooth. I highly recommend making this delicious cake! The combination of slightly tart cherries, sweet cream, and thin crêpes is incredibly tasty.

Prepare all the ingredients you need for a crepe cake. Take the cherries out of the freezer ahead of time and drain them in a sieve so all excess juice runs off.

To make pancakes, crack chicken eggs into a bowl and add salt and sugar. Whisk until combined.

Pour in warm milk and mix again.

Sift in the flour and whisk with a whisk until the batter is smooth, with no lumps.

Pour in boiling water and, stirring constantly, thoroughly mix the batter. Then add the oil and mix again. The batter is ready for cooking crêpes.

Fry thin pancakes in a dry skillet.

To make the cake, you will need 13–15 ready-made pancakes. Let the pancakes cool.

To make the cream, beat sour cream, cream cheese and icing sugar together with an electric mixer.

Let’s begin assembling the cake. On the finished crepe, arrange a row of cherries in a chain.

Roll the pancake into a tight tube.

Arrange 5 or 7 prepared cherry tubes on the dish as the first layer.

Next, assemble the cake in a pyramid shape. Place 4 rolled crêpes on the cream.

Next, arrange in descending order: 3 tubes, then 2, then 1, spreading cream between each layer.

Coat the entire cake with the remaining cream and refrigerate for 2–3 hours or overnight.

The finished cake can be decorated as you like—for example, with grated chocolate or by drizzling it with melted chocolate. I melted the chocolate in a double boiler.
