
Apple strudel cake
Description
The pastry is simple and quick to prepare. I bake the quick apple roll quite often, and one day I decided to try making a cake from this roll. And you know what? The result was so delicious that now all my friends make this cake too. I'm sharing this amazingly simple recipe with you. The base is the apple roll, which always turns out well, so don't worry about ruining ingredients—go ahead and get started :) Serve it with tea or coffee.

1. Peel the apples and grate them on a coarse grater. If the apples are very juicy, squeeze out some of the juice. To the apple pulp, add sugar, lemon zest, and lemon juice. Mix well.

2. Beat the eggs with regular sugar and 1 teaspoon of vanilla sugar into a thick, light mixture. This will take about 4-5 minutes. Add the flour mixed with baking powder and blend at low speed using a mixer.

3. Line the baking sheet with parchment paper and spread the apple mixture in an even layer. Then pour the batter on top.

5. Bake in a preheated oven at 180 degrees for about 20 minutes, until the sponge cake is lightly browned.

6. Flip the ready base of the future cake with the apple filling facing up and remove the parchment paper. It comes off easily.

7. And roll it up into a roll, not tightly! Let it cool.

8. While the apple strudel is cooling, prepare the cream. Lightly whip the cream with powdered sugar and the remaining vanilla sugar. Rub the cottage cheese through a sieve to remove any lumps from the cream. You can also use ready-made sweetened cottage cheese.

9. Add the cottage cheese and lemon juice to the cream and beat until a thick cream forms. Add powdered sugar to taste.

10. Cut the roll into 4-5 pieces and unroll them. It should not be warm, otherwise the cream will "melt."

11. Spread the roll portions with cream (don't forget to leave a little cream for decorating the cake). Roll up the first cream-covered portion—not too tightly!

12. Then, wrap the next strip of apple sponge cake, spread with cream, around the first roll, and so on.

13. Gently press the cake to shape it into a perfect circle, transfer it to a serving plate, and spread the remaining cream evenly over all sides.
