
Pumpkin Cake
Description
Perfect with tea and coffee. While Americans have been baking all kinds of pumpkin pies and cakes for many decades (and perhaps even centuries), in Russia and other post-Soviet countries people make anything from pumpkin—except cakes. And that's a shame: pumpkin cake is a real treat. It's very hard to put the richness of pumpkin cake flavor into words; you have to taste it. So go ahead and try it—a simple pumpkin cake recipe will help you with that :) The baking is done. Serve and enjoy.

Grease the cake pan with butter or margarine.

At medium mixer speed, beat the eggs, maple syrup, and pumpkin puree until smooth. Then gradually mix in the flour, salt, and baking powder. Pour half of the batter into a cake pan.

At medium mixer speed, lightly beat the cream cheese with the sugar and vanilla. Spread the mixture evenly in the baking pan over the first layer of dough.

Level evenly with the back of a teaspoon.

Then pour in the second portion of the pumpkin batter and spread it evenly.

Place in an oven preheated to 180°C and bake for about 40–50 minutes, until a toothpick comes out clean.

Let the finished cake cool.

Whip the cream with powdered sugar until a smooth glaze forms.

Pour the finished glaze over the top of our cake.
