
Cake of Three Milks
Description
This popular Latin American dessert translates as "cake of three kinds of milk." It has an incredibly delicate flavor and will beautifully adorn any table.

1. Prepare the milk mixture. Pour condensed milk into a large microwave-safe container and cover with plastic wrap. Microwave on low heat, stirring every 3–5 minutes, until the milk slightly darkens, about 12–15 minutes. Remove from the microwave and gradually add unsweetened condensed milk, cream, and vanilla extract, whisking with a whisk. Let cool to room temperature.

2. Prepare the cake. Preheat the oven to 160 degrees. Grease the baking pan and dust it with flour. In a bowl, whisk together flour, baking powder, salt, and cinnamon.

3. Heat the milk and butter in a saucepan over low heat until the butter melts. Beat the eggs with a mixer in a large bowl for 30 seconds. Gradually add the sugar. Increase the speed to medium-high and beat until the mixture thickens, about 5–7 minutes. Reduce the speed to low and slowly mix in the milk-butter mixture and vanilla. Add the flour mixture and beat at medium speed for 30 seconds.

4. Pour the batter into a baking pan and bake until done, 30-35 minutes. Remove the cake from the pan and let cool for 10 minutes.

5. Use a skewer to poke holes 1.5 cm apart. Gradually pour in the milk mixture, allowing it to be completely absorbed. Let it stand for 15 minutes at room temperature. Then place in the refrigerator, uncovered, for 3 to 24 hours.

6. Prepare the cream. Take the cake out of the refrigerator 30 minutes before serving. Using a mixer on medium speed, beat the heavy cream, molasses, and vanilla for 1–2 minutes. Spread the cream over the cake and slice. If desired, decorate with fresh berries.
