
Cake made from yeast-free puff pastry
Description
The pastry is simple and quick to prepare. I've always used flaky yeast-free dough for making cookies, various sweet and savory turnovers, but recently I found a recipe. Serve cooled or slightly warm.

Prepare all the necessary ingredients. Thaw the dough at room temperature by placing it on a floured surface. Note that puff pastry must not be thawed in the microwave, so even if you're in a hurry, make sure to take the dough out of the refrigerator ahead of time.

For a small-sized cake, you will need 2 sheets of dough. Cut each sheet in half and roll it out so that it nearly doubles in size.

Line a baking sheet with parchment paper and place the dough on it. If you have a large baking sheet, you can place all 4 dough sheets on it at once and bake them in a single batch. I had to bake the dough in batches of 2 sheets, which slowed down the cake preparation process slightly.

Press the finished cake layers gently with your hands to flatten them slightly, making it easier to spread the cream later.

While the cake layers are cooling, prepare the cream. Mix sour cream with sugar and beat with a mixer until thickened. You can add a sour cream thickener only if you are using the lowest-fat sour cream. The cream should be slightly runny so it soaks the cake layers well and makes the cake moist.

Spread the first cake layer with cream, then place the second layer on top, and so on.

The pie made from unleavened puff pastry is ready.

You can decorate it with the same sour cream frosting and a couple of canned cherries. Let the cake soak for 1-2 hours.
