
Profiterole cake with pastry cream
Description
It goes perfectly with tea and coffee. Profiteroles are quite easy to make. Anyone familiar with choux pastry will find this straightforward. For beginners, I give a detailed description of each step of the recipe. The cake is very tasty and delicate. Essentially, it is made from the same éclairs, only smaller in size.

Prepare the ingredients for making a profiterole cake.

Prepare the dough for profiteroles. Put the butter in a heavy-bottomed saucepan and pour in water.

Bring to a boil until the butter has completely melted.

Then add a pinch of salt and flour.

Mix the dough until smooth and lump-free.

Add the eggs one at a time, 3–4 in total. How many you use depends on their size.

You should end up with a homogeneous, smooth, viscous dough.

Using a piping bag with a tip or a teaspoon, pipe the profiteroles onto a baking sheet lined with parchment paper or a silicone baking mat.

Bake the profiteroles in the oven for the first 10–15 minutes at 190–200°C. Then lower the temperature to 175°C and bake the profiteroles for another 15–20 minutes until done. They should turn golden brown, increase in size, and be hollow inside. After that, turn off the oven and leave the profiteroles inside for another 10–15 minutes.

While the profiteroles are in the oven, make the pastry cream. Pour the milk into a saucepan and set it on the stove.

Place the egg yolks in a bowl.

Add sugar and vanilla sugar. Mix thoroughly.

Then add corn starch or wheat flour. Pour in 3–4 tablespoons of cold milk.

Mix the egg yolks with the sugar and starch again until smooth. There should be no lumps.

When the milk begins to boil, pour in the prepared mixture. Stir the cream constantly until it thickens. Then cool it.
