
Cake from ready-made layers
Description
The recipe won't take much time. Ready-made cake layers can be bought in almost any large supermarket, or you can purchase a sponge cake at bakery shops and cut it as you like. A ready-made sponge cake actually works better, making the cake more tender. If the layers happen to be too dry, you can pre-soak them with sugar syrup, diluted condensed milk, or, for an adult version, a creamy liqueur such as "Belize." You can decorate it to your taste, replacing the second cream with chocolate, nuts, or crushed wafers. The cake is quite sweet, so I recommend adding fresh berries or lemon curd between the layers. Serve cooled or slightly warm.

Prepare all the necessary ingredients for making a cake from ready-made layers. Take the butter, mascarpone, and condensed milk out of the refrigerator in advance so they can reach room temperature. Wash the berries (I'm using blueberries) and dry them on a paper towel.

Place the butter for the cream (200 grams) into a bowl and beat at medium speed until light and fluffy. This will take about 3 minutes.

Add the condensed milk to the whipped butter one tablespoon at a time, beating well each time until smooth and uniform.

Pour the cognac into the ready-made cream and whisk for another 20 seconds. The cream is ready to use immediately.

Spread one cake layer with an even layer of part of the cream and arrange the blueberries on it, reserving some for decoration.

Place the second cake layer and spread it with cream as well. Place the last one, apply cream on top and on the sides of the cake, and smooth it out.

For decoration, beat the remaining butter into a fluffy mixture. Whip mascarpone with condensed milk, combine both mixtures and beat until fully incorporated. Decorate with the cream and berries as you like, then refrigerate for one hour to set.
