
Zucchini Cake
Description
The appetizer turns out magnificent and disappears from the table in minutes. I’m sharing my favorite recipe—be sure to try it! For the filling, I use tomatoes, but you can also make the appetizer with mushrooms, sautéed onions with carrots, cheese, ground meat, and so on. It all depends on your imagination.

Prepare all the ingredients.

Grate the zucchini on the coarse side of a grater. Add a pinch of salt, mix, and let sit for 10 minutes.

Press the zucchini well to remove the excess liquid and transfer to a deep bowl.

Add flour, eggs, salt, and pepper to taste.

Mix well.

Combine the mayonnaise with pressed garlic and dill. The sauce is ready. You can use mayonnaise and sour cream in equal proportions to make the sauce a little lighter.

Heat a skillet with oil. Using a tablespoon, scoop out the zucchini mixture and shape pancakes of your desired size. It’s better not to make them too thin. Fry the zucchini pancakes over medium heat on both sides until golden brown.

While baking the pancakes, stack them and brush with sauce. The filling can be varied; I like tomatoes best of all. You can cut the tomatoes however you like, but try to make the slices as thin as possible.

The zucchini cake is ready. Chill it in the refrigerator before serving. Decorate as desired.

For garnish, I have grated cheese and herbs.
