Instructions

Step 1

1. First, you need to bake the sponge cake. Carefully separate the egg whites from the yolks. Beat the whites with sugar until stiff peaks form. Gradually add the yolks, continuing to beat. Add starch, vanilla, and flour in batches, beating thoroughly to avoid lumps. Pour the batter into a baking pan and place in a preheated oven for 25–30 minutes. Remove the baked sponge cake and let it cool for at least 4 hours.

Step 2

2. To prepare the cream, combine milk, sugar, and a little flour. Place over heat and cook until thickened. Then divide the cream into 2 parts. Add chocolate to one part and stir thoroughly until melted.
- 3
Step 3

3. Dissolve the gelatin in water or fruit syrup. Slightly heat and add to both parts of the cream. Also, chop the fruits and mix into the cream.
- 4
Step 4

4. Whip the cream until stiff peaks form. Divide into 2 parts and gently fold into both portions of the cream.
- 5
Step 5

5. Divide the sponge cake into 3 parts. Place the first layer (you can optionally moisten it with fruit syrup) and spread with milk cream. Add the second layer, then top with chocolate cream.
- 6
Step 6

6. Cover with the third layer and refrigerate the cake for at least 4-5 hours (preferably overnight).
- 7
Step 7

7. Spread the buttercream over the entire surface of the cake, including the sides. Return the cake to the refrigerator (chill for at least 1 hour).
- 8
Step 8

8. Roll out the fondant quite thinly.
- 9
Step 9

9. Cover the cake with fondant.
- 10
Step 10

10. To make the "Anniversary" cake perfect at home, carefully smooth the fondant over the surface, then trim the excess edges.
- 11
Step 11

11. Place the cake in the refrigerator for 1-1.5 hours.
- 12
Step 12

12. The rest is just a creative process. Add food coloring to the fondant and roll out small strips.
- 13
Step 13

13. You can decorate the cake with simple flowers using cookie cutters.
- 14
Step 14

14. You can make small indentations in the center (using a cotton swab, for example).
- 15
Step 15

15. Beads can be placed into the resulting indentations. This is just one option for decorating the "Anniversary" cake; you can decorate it however your imagination suggests.
