Making the "Persimmon" cake is very simple, and this step-by-step recipe will help you do it. You can use any nuts, or a mix of them—culinary creativity is welcome. Serve cooled or slightly warm.

    In a bowl, combine the flour, baking powder, vanilla sugar, cinnamon, nutmeg, and poppy seeds, then add the chopped nuts.

    Whisk together 150 grams of sugar, the egg, and softened butter.

    Combine the dry ingredients with the butter-egg mixture, mix, and knead into a fairly firm dough.

    Place the dough into a springform pan 21–22 cm in diameter. Bake in the oven for 30 minutes at 180 degrees. Cool the finished cake layer to room temperature without removing it from the pan, since the gelatin filling is still to be added. If you have acetate tape, line it along the side of the pan.

    While the cake layer is baking, start preparing the jelly: use a spoon to scoop out the persimmon pulp and blend it with an immersion blender.

    Grate orange zest into the persimmon.

    Squeeze the orange juice, add sugar to taste, 1–2 tbsp. Weigh the total amount of fruit mixture so that it matches the amount of jelly that can be made from the packet of gelatin. In this recipe, sheet gelatin intended for 400 grams was used, so the mass of persimmon, sugar, and orange juice came to 400 grams.

    Soak the gelatin in cold water for 7 minutes or according to the instructions on the package you are using.

    Pour the persimmon and orange juice mixture into a saucepan, heat it, add the soaked gelatin, and heat until the gelatin dissolves. Spread the jelly over the cake layer cooled to room temperature. Place it in a cool place to let the jelly set.

    Melt the chocolate in a double boiler or in the microwave.
